The Cupcake Economy

As per last post here are my personalised Pistachio Macaroons with Salted Caramel Filling, made for my beautiful girlfriends 40th.  To personalise them into a gift, I made them into fortune cookies by printing up 40 positive quotes onto vellum paper and wrapping them around the macaroon, securing with food glue at the back.  I was going to make a combo of different macaroons, but live in a small town - no pecan nuts to be found anywhere!!!!
